Alpha Gal IgE The presence of IgE antibodies to the carbohydrate antigen galactose-alpha-1 3-galactose (Alpha-gal) may be associated with delayed anaphylaxis angioedemia and urticaria following the ingestion or consumption of mammalian meat including beef lamb pork as well as wild game. Other meat sources such as poultry (chicken or turkey) and fish do not contain Alpha-gal and are not associated with Alpha-gal mediated delayed hypersensitivity.
